Amigos, I am proud to say that my recipes have been published recently in two excellent recipe collections. Try my paella verduras (vegetable paella) in the Meat-free Monday Cookbook, supporting the campaign to reduce our reliance on meat.  I know it may sound odd coming from me, but – much as I love jamón etc – I also love vegetables when properly prepared.

Green & Black’s Ultimate Chocolate Recipes is a must-have for chocolate lovers.  My chocolate-crazy friends also rave about it.  My contribution is a chocolate cake made with olive oil.  It has 30% less saturated fat than the butter-based equivalent.  It is completely flourless, so gluten-free and does not use substitutes made from nuts.  It’s almost good for you!  I recommend a fruity olive oil for this, like arbequiña.  Enjoy!
